It's funny how trends in kitchen counters come and go. Granite slab countertops definitely had their heyday around the turn of the millennium.
Yet granite slab does have many good points, chief being that they are mostly seamless. Laminate counters (Formica, WilsonArt, etc.) have the seamless thing down pat, but they feel chintzy.
Solid surface (Corian, Formica Solid Surfacing, etc.) are fairly seam-free, and are more solid-feeling, yet never as solid as a hunk of igneous rock carved out of the earth.
And a Twist on the Slab Granite Counters Thingy...
One nice development is that some granite slab manufacturers fabricate a super-thin slab (saves money, saves weight), a mere half-inch thick. This area, which normally would break practically by looking at it, is supported by good ol' MDF board underneath. Then the edges are thicker, so that they look better and can accommodate edge treatments.
